ASIA KITCHEN: Mrs. Lau’s Easy Meals

Shrimp with Tomato Sauce

Shrimp with Tomato Sauce

Ingredients (serves 4-6):

1 lb Shrimp, deveined
2 Tomatoes, cut into small wedges
2 Bell Peppers, one green,
one red, diced
2 Tsp Ketchup
1 Tsp Sugar
½ tsp Salt
¼ tsp Pepper
2 tsp Cooking Oil

Directions:

  1. Season shrimp with salt and pepper.
  2. Heat 1 tsp oil in wok. Cook shrimp for 3 minutes until just pink.
  3. Set shrimp aside.
  4. Heat remaining oil. Stir fry tomatoes, ketchup, red and green peppers on medium to high heat until peppers are tender.
  5. Add shrimp and sugar. Cook for 5 minutes.
  6. Serve over rice or noodles.

Mrs. Lau was born in Hong Kong.She moved to Orlando in 1997. Since she lives with her American son-in-law, she has to cook dishes that appeal to both Chinese and American tastes.
