ASIA KITCHEN: Mrs. Lau’s Easy Meals

Curry Fish Ball

Curry Fish Ball

Ingredients (serves 4-6):

1lb
Fish Balls
1 Tsp
Lee Kum Kee Coconut Flavored Curry Sauce
1½ tsp
Curry Powder
1 tsp
Chicken Broth Powder
1 can
(6 oz)
Coconut Milk
2
l
Tomatoes
1 tsp
Sugar
1 Tsp Cooking Oi

Directions:

  1. Heat oil in wok. Add fi sh balls over high
    heat, turning the pieces constantly for
    approx. 2 – 3 minutes.
  2. Put fi sh balls to side.
  3. Reduce heat to medium. Add tomatoes and sugar.
    Cook for a minute.
  4. Then add fi sh balls and all remaining ingredients.
  5. Stir and simmer for 20 minutes.

Mrs. Lau was born in Hong Kong.She moved to Orlando in 1997. Since she lives with her American son-in-law, she has to cook dishes that appeal to both Chinese and American tastes.
