Steamed Sea Bass

Ingredients (serves 4-6):
| 1½ lb |
Sea Bass, gutted, with head and tail on |
| ¼ cup |
Ginger, julienne |
| ½ cup |
Scallions, julienne |
| 1 Tsp |
Cooking Oil |
| 2 Tsp |
Amoy Soy Sauce for Seafood |
Directions:

Score the skin on the fish. Place some ginger and scallions inside
cavity of fish.

Line some scallions on bottom of steaming plate.

Steam fish for 8 minutes, or until cooked.

Heat oil in wok. Add scallions. Cook for ½ minute.

Pour scallions over fish.

Add Soy Sauce for Seafood over fish.
